Key Characteristics:
- Appearance: Small, flat, and bright yellow. It does not require soaking before cooking, though a quick 15-30 minute soak can make it even softer.
- Texture & Flavor: It has a mild, slightly nutty, and earthy flavor. When cooked, it becomes very soft and creamy, making it perfect for thick dals or porridges.
- Digestibility: It is considered the easiest lentil to digest in Ayurveda. It is often the first solid food given to babies and is the primary ingredient in Khichdi (a restorative rice and lentil dish).
