Brown sugar is a sucrose-based sweetener distinguished by its brown color, moist texture, and caramel-like flavor, all of which come from the presence of molasses. Unlike white sugar, which is highly refined to remove all molasses, brown sugar either retains some of the natural molasses from the initial processing or is created by mixing molasses back into refined white sugar.
